Cold milk is poured to the brim of the glass, then a shot of warm espresso is added on top — the two liquids meet and create a beautiful coffee gradient that slowly blends as you watch. It is visual, it is intentional, and it is one of the most ordered drinks at the café. Mike once made it with three types of milk for a special guest.

Keith Nilo and Mike Lozano are the founders and the faces of Happy Valley Café. Both are trained barista-chefs — they did not choose between making coffee and cooking food, they do both. Chef Gene Gonzalez, a pillar of Philippine culinary culture, called them "two of the most dynamic baristas in the Mindanao coffee scene." They were featured in "Young Chefs of Davao" Episode 3 in November 2023.

Mike will guide you through the tasting notes of the single-origin Arabica — the cup material, the temperature, the bloom, the timing. Every variable affects what you taste. It is educational and personal — not a performance, but a genuine sharing of knowledge. Many guests say it changed how they think about coffee.
